I was just reading one of these tales, and the same question occurred to me. My theory is that Spain is like Elfland- a far away place that may or may not be real; where magical and wondrous things happen. Another point (not that I have any basis for this) is that in some parts of Europe, the axiom about castles in the air is literally about castles in Spain. I think of stuff like this as similar to the ancient Greeks/Romans referring to everything mysterious as originating in Ethiopia. Akin to the Middle Ages habit of everything peculiar being from India. ie- it's weird and inexplicable and magic to us and it's from somewhere very different from here- it must be Ethiopia/India/Spain/Elfland. Just an idea.

Thank you for your response. Certainly food for thought. I have recently read somewhere, unfortunately can't remember where, that Spain may be a reference to the wars between England and Spain - not sure how that ties in.
