what does blue, white, yellow, pink, red, and purple mean, in fairy tales?

Depends upon the context.
Red is commonly meant to refer to blood, but it can also refer to a woman's sexual maturity.
White is often a reference to death, as in a white lily.
Most of the time they have no meaning whatsoever.

It depends on the fairy tale in question and its context. White can signify death, as Patrick writes, and it can signify virginity or purity. Blue is a color artistically associated with the Virgin Mary...but that's only significant if the tale you're looking at is in a Christian context. Are there any specific tales you're thinking of?

Gold often marks some sought-after object, according to Max Luthi. It's usually metal, sometimes a character with golden hair. There's a Russian tale about a girl whose little brother was stolen by a bird or witch or such. When the girl found the lair, there was her little brother "safe and playing with a golden ball." No ball or gold had been mentioned before, the ball had nothing to do with the story. I don't recall references to things that are simply painted gold.

purple
Purple (in general), often is associated with wealth, prestige, and royalty. Mostly because the dye was extracted from shellfish - which is rare and extremely costly to produce.
