Food in Fairy Tales
I'm teaching a mini-course this fall for a bunch of middle schoolers called "Fiction, Food, and Fun". I'd like to do a unit on fairy tales and the foods featured in them. We'll be doing some cooking and eating along with reading and discussing. Anyone have some suggestions as to what stories I should feature? I already have a few good recipes for porridge.

Lord of the Rings Lembas Bread / Leaf Wrappers
entropyhouse.com/penwiper...embas.html
interesting web site link above which includes leaf wrappers.
and here's a few recipes for the lembas bread:
Lembas Bread / LOTR
Ingredients:
2 1/2 cups of flour
1 Tablespoon baking powder
1/4 teaspoon salt
8 Tablespoons cold butter (1 stick)
1/3 cup sugarIngredients:
2 1/2 cups of flour
1 Tablespoon baking powder
1/4 teaspoon salt
8 Tablespoons cold butter (1 stick)
1/3 cup sugar
1/2 teaspoon cinnamon
2/3 cup milk ( or 2/3 cup of heavy cream = better)
1/2 teaspoon vanilla
honey or maple syrup for dipping
Preheat over to 425 degrees.
Mix flour, baking powder, and salt in a large bowl. Add butter and mix with a fork or pastry cutter until mixture looks like fine granules. Add sugar and cinnamon and mix. Add milk and vanilla and stir with a fork until dough forms. (you can add a little bit more milk than the recipe calls for if it gets too hard to stir.)
Roll into balls and place on cookie sheet, mashing them out until they are about 1/2 inch thick and 3 inches across. Makes about 12 - 14. Bake for about 12 minutes or until insides aren't gooey. (I would suggest making them small, for if they are too big, they will fall apart very easily.)
Variation:
2 1/2 cups of flour
1 Tablespoon baking powder
1/4 teaspoon salt
8 Tablespoons cold butter
1/3 cup sugar
2/3 cup milk
1/2 teaspoon lemon extract
Preheat over to 425 degrees.Mix flour, baking powder, and salt in a large bowl. Chop butter into mixture with a pastry cutter or knead in with your fingers until you get a crumbly mixture. Add sugar and mix. Add milk and lemon extract and stir with a fork until dough forms.
Roll the dough out about 1/2 inch thick. Cut out 3 inch squares and transfer to a cookie sheet. Criss-cross each square from corner to corner with a knife. Bake for about 12 minutes or until set and lightly golden. Makes 10 to 12.

Re: Lord of the Rings Lembas Bread / Leaf Wrappers
The Autumn issue of the Endicott Studio's Journal of Mythic Arts
(www.endicott-studio.com)
will be devoted to food in myth, folklore, and fairy tales. It will
be on-line in October. (We're in the last stages of preparing the
Summer issue now, which is on Mythic Patterns and Designs.)
