Fairy Tales like Theseus & the Minotaur?
I did a search on Sur La Lune for "minotaur" and didn't come up with very much so I'm posing the question:
Apart from Beauty & the Beast (yes, it's stretching it a little but still worth examining for parallels in my mind) are there any fairy tales that resonate with this myth? I'm sure there are lesser known tales that are similar but any inspiration from you guys would be a great place to start researching.
If there's a discussion about this I didn't find would somebody please point me to the link?
Many thanks for all your insights and inspirations!

Not just labyrinth parallels...
In re-reading my post I realize I didn't specify I wasn't "just" interested in the labyrinthian parallels so I mean I'm looking for fairy tales than parallel more than just being lost in the forest or a maze of some kind...I'm thinking also about the thread, the 1/2 man 1/2 beast, the hero going into a maze after the beast etc
Thanks!

Island of the Minotaur
Though it is not exactly what you asked for, I'd like to recommend a new book by Sheldon Oberman called "Island of the Minotaur" which includes the Theseus story. It has just been published in the US by Crocodile Books and in the UK and Canada by Tradewind Books. Stunning illustrations by Balir Drawson.

Re: Island of the Minotaur
There was a wonderful retelling of the myth of the Minataur in one of the Books of Magic special issues by Neil Gaiman: he paralleled the traditional myth with the image of a girl fleeing an abusive home, only to find herself in an even more dangerous situation out in the wide world (I believe that at least part of the story took place in a bar called the Labyrinth).

Other Greek myths?
Why not look at other Greek parallels? Jason and the Argonauts has a few similarities, such as the king's daughter who helps but ends up being jilted. Just about every hero in Greek myth fights a half-human monster...If you want to get into heavy research you might look at connections with Egypt.
There's a superb retelling of Theseus by Mary Renault in "The King Must Die"--the labyrinth is home to the bull dance, a sacrificial ritual.
Some European stories involve going in after a monster. However, the monster is more often a troll in a subterannean cavern.
