There's a nice general essay on Angela Carter here: www.themodernword.com/scriptorium/carter.html.
It's about her work overall, rather than The Bloody Chamber specifically,
but interesting nonetheless.
For more in-depth material on Angela Carter and literary fairy tales,
the excellent journal Marvels and Tales devoted an entire issue

Carter Research Page is one I've found, it has a cool link to
a tv interview with Ms. Carter. Also, check if your university is
linked to a database like Project Muse or Infotrac Web since they
have some pretty good academic journals on their list. Lots of articles
about Carter available there.
And yeah, that special Marvels and Tales issue on Carter
Ms Windling mentioned is a great resource - it can also be ordered
via amazon.com, which is how I got my own (precious) copy.

There are a number of collections of essays on Carter's work--if
you have access to a university library, a quick troll through their
catalog should bring up a few. One I know off the top of my head
is called Angela Carter: The Rational Glass. I think there's
another called Flesh and the Mirror, but I wouldn't swear
to it.
