where to start?
Recently I've discovered and become enamoured with Charles de Lint's works. As a result, it has piqued my interest in fairy stories, legends, mythologies... and I would like to read more into such stories.
There seems to be an amazingly large number of books and researches done in these fields that I'm not sure where to start.
What would be a good launching point? I would appreciate any help that can set me in the right direction.

Well, there are many places to start. If you can get them, here are a few recommendations:
Zipes, The Complete Fairy Tales of the Brothers Grimm;
Zipes, Beauty and the Beast and Other Classic French Fairy Tales ;
Calvino, Italian Folktales;
Hadaway, 1001 Nights (translation);
Tatar, Classic Fairy Tales (annotated)
Yolen, Touch Magic
Surlalune Fairy Tale Pages

Oh, you could go to Amazon. catja1, a frequent participant on this board, has put together a pretty decent list of 22 books. She has a few I haven't read (yet) on her list. But the above titles are the ones I started with a few years back. I have since progressed to books and articles in areas in which I have a particular interest. I got started just by trying to find a version of "The White Cat" . Look at me now - I got more than I bargained for. lol
