Dear Heidi:

While I can't help with Calvino or Basile, I am familiar with one excellent resource on religious imagery in the work of the Brothers Grimm: Ronald Murphy. A couple of years ago, he came out with a book called _The Owl, the Raven & the Dove: The Religious Meaning of the Grimms' Magic Fairy Tales_, published by Oxford University Press. Hope this helps!

There is also "The Wisdom of Fairy Tales" by Rudolf Meyer. Meyer focuses on the Germanic tales using his studies in theology and philosophy. It's on my shelf, but never been read by me. It's on the "someday" list.
